苹果渣富含多酚类物质,包括黄酮类、单宁类、酚酸类以及花色苷类等化合物,具有抗氧化性,可以促进人体健康。以苹果渣为原料提取其中的多酚类物质,为苹果渣的利用提供新途径,提高苹果附加值。利用微波法提取苹果渣中多酚物质,以乙醇体积分数、固液比、微波功率和提取时间为影响因素,通过单因素试验和优化试验确定优化工艺为乙醇体积分数70%,固液比1∶10,微波功率300 W,提取时间120 s。

Apple pomace is rich in polyphenol including flavonoid, tanin, phenolic adids, anthocyanin and so on. These compounds have inoxidizability and promote health potentially. Extracting polyphenol from apple pomace, it can offer a new way for using apple pomace and advance additional value. It extracts polyphenol from apple pomace with microwave. There are four analysis factors including ethanol concentration, ratio of solid to liquid, microwave power and extractive time. Through single factor experiments and orthogonal experiments, it can confirm optimized extracting condition: ethanol concentration 70%, ratio of solid to liquid 1∶10, microwave power 300 W and extractive time 120 s.
