该实验研究酰化法制备脂溶性茶多酚在油脂体系中抗氧化性能。结果表明：利用酰化法，引入长碳链能改变茶多酚亲水特征，制备的LTP不仅具备脂溶性特点，同时具有出色抗氧化性能，所得产品具备比合成抗氧化剂BHT高的抗氧化能力；在油脂中添加200 ppm即有较好抗氧化效果；能有效延缓油茶、大豆调和油、奥尼葡萄籽油、橄榄油、茶叶籽油的脂质过氧化。

This study investigated the antioxidant ability of acylated lipid-soluble tea polyphenol in lipids. The results showed that the tea polyphenol with long carbon chain through acylation has good hydrophilicity and excellent oxidation resistance. The product has higher antioxidant activity than BHT and the lipid has good antioxidant effect with adding 200 ppm of the product. The lipid-soluble tea polyphenol can effectively delay lipid peroxidation in camellia oil,soybean oil,import grape seed oil, olive oil and tea seed oil.
