以市场上常见的光皮皮蛋、包泥皮蛋、包糠壳皮蛋为研究对象,测定不同皮蛋的蛋质量、蛋黄质量、蛋壳厚度、蛋形指数、气室直径、气室高度、单位面积黑点数、最大黑点面积、溏心率等指标。结果发现,包泥皮蛋蛋壳表面没有黑点,蛋质量高于其他几种皮蛋,但蛋黄质量却小于其他几种皮蛋;包糠壳皮蛋表黑点数少于光皮皮蛋,蛋质量最小;包泥皮蛋和包糠壳皮蛋的气室高度较高,溏心率也高于光皮皮蛋;光皮皮蛋的蛋质量比较均匀。相关分析结果表明,皮蛋的蛋质量与蛋壳厚度呈显著正相关,与单位面积黑点数和最大黑点面积以及蛋黄质量呈负相关;蛋黄质量与蛋质量、气室直径、气室高度呈负相关;蛋壳厚度与单位面积黑点数及最大黑点面积呈负相关;蛋形指数与蛋黄质量、气室直径、气室高度、单位面积黑点数和最大黑点面积以及呈负相关。因此,皮蛋的蛋黄质量、表面黑点数以及表面最大黑点面积等感官指标受加工方式以及蛋形指数、蛋质量、蛋壳厚度等蛋品品质因素影响。
以市場上常見的光皮皮蛋、包泥皮蛋、包糠殼皮蛋為研究對象,測定不同皮蛋的蛋質量、蛋黃質量、蛋殼厚度、蛋形指數、氣室直徑、氣室高度、單位麵積黑點數、最大黑點麵積、溏心率等指標。結果髮現,包泥皮蛋蛋殼錶麵沒有黑點,蛋質量高于其他幾種皮蛋,但蛋黃質量卻小于其他幾種皮蛋;包糠殼皮蛋錶黑點數少于光皮皮蛋,蛋質量最小;包泥皮蛋和包糠殼皮蛋的氣室高度較高,溏心率也高于光皮皮蛋;光皮皮蛋的蛋質量比較均勻。相關分析結果錶明,皮蛋的蛋質量與蛋殼厚度呈顯著正相關,與單位麵積黑點數和最大黑點麵積以及蛋黃質量呈負相關;蛋黃質量與蛋質量、氣室直徑、氣室高度呈負相關;蛋殼厚度與單位麵積黑點數及最大黑點麵積呈負相關;蛋形指數與蛋黃質量、氣室直徑、氣室高度、單位麵積黑點數和最大黑點麵積以及呈負相關。因此,皮蛋的蛋黃質量、錶麵黑點數以及錶麵最大黑點麵積等感官指標受加工方式以及蛋形指數、蛋質量、蛋殼厚度等蛋品品質因素影響。

Bare preserved egg and preserved egg wrapped in mud, wrapped in chaff are studied in the research, egg weight, yolk weight, eggshell thickness, egg shape index, gas chamber diameter, gas chamber height; black dots per square centimeters, area of the biggest black spot, and rate of soft yolk are measured. The results show that there is no black dot on preserved egg wrapped in mud, the egg weight is the heaviest but yolk weight is the lightest; The number of black dots on preserved egg wrapped in chaff are fewer than bare preserved egg and the egg weight is the lightest; egg weight of preserved egg wrapped in mud is the heaviest, but the yolk weight is the lightest, egg weight of preserved egg wrapped in chaff is the lightest; Gas chamber diameter and gas chamber height of preserved egg wrapped in mud and wrapped in chaff are bigger than bare preserved egg, and rate of soft yolk also higher than bare preserved egg; Egg weight of bare preserved egg are uniform. Correlation analysis shows that egg weight have significant positive correlation with shell thickness, but have negative correlation with black dots per square centimeters, area of the biggest black spot and yolk weight; Yolk weight have negative correlation with egg weight, gas chamber diameter and gas chamber height; Eggshell thickness have negative correlation with black dots per square centimeters and area of the biggest black spot; Egg shape index have negative correlation with egg weight, gas chamber diameter, gas chamber height, black dots per square centimeters and area of the biggest black spot. So the indexes of yolk weight, black dots per square centimeters, area of the biggest black spot are affected by processing methods and egg quality indexes such as egg shape index, egg weight, and egg shell thickness.
