随着我国核桃产业的发展，传统的干燥技术已经不能满足该产业的发展，甚至严重制约核桃农产品经济效益的提高。通过介绍几种常见的核桃干制技术，以及它们的原理和优缺点，旨在为核桃干制技术的研究和应用提供参考。最后指出我国核桃干制技术的发展趋势。

With the development of Chinese walnut industry, traditional drying technologies can't keep up with this domain, even prevent the increase of nut's economic benefit. Several methods of drying nuts, their principles and advantages and disadvantages are emphatically introduced. It provides a reference for further research on nuts drying. And an outlook of nut drying technologies is proposed finally.
