本文简要介绍了常见几种植物所烧制的草木灰中主要成分,通过对常规元素检测分析得出:其中含量最多的是钾元素,一般含钾6~12豫,其中90豫以上是水溶性,以碳酸盐形式存在;其次是磷,一般含1.5~3豫;还含有钙、镁、硅、硫和铁、锰、铜、锌、硼、钼等微量营养元素。在此基础之上,着重阐述了草木灰在食品加工行业中的应用与前景展望。

This paper briefly introduces the main components of the plant ash fired from the common plants. Conventional element detection indicates that the most abundant element is kalium, usually 6~12%, more than 90% of which is water-soluble and exists in the form of carbonate. The second abundant element is phosphor, usually 1.5~3%. It also contains calcium, magnesium, silicon, sulfur and iron, manganese, copper, zinc, boron, molybdenum and other micronutrients. Based on this, the paper mainly expounds the application of plant ash in food processing industry and prospect.
