借助双螺杆挤压机通过单因素试验和Box-Behnke设计,研究机筒温度、水分含量、螺杆转速和喂料速度4个挤压操作参数对高营养复合杂粮米的糊化度、复水性及整体质构的影响以及优化工艺参数。经响应面分析最终确定最优工艺参数是机筒温度157℃,水分含量17%,螺杆转速183 r/min,喂料速度232 g/min,在此工艺条件下复合杂粮米的糊化度为82.10%,与响应面分析得的预测值仅差0.49%,这表明此工艺具有潜在的工业化应用价值。

Effect of barrel temperature, moisture content, screw speed and feed rate on gelatinization, rehydration and texture properties of the composite grains-rice with high nutrition are studied to optimization of process parameters with the twin-screw extruder by single factor test and Box-Behnke design. The optimal process parameters are as follows: barrel temperature of 157 ℃, 17% moisture content, screw speed 183 r/min, the feeding speed 232 g/min by response surface analysis. Under these conditions, 82.10% gelatinization of the composite grains-rice is gained, just under 0.49% of the predictive value by response surface analysis and it shows that this process has a potential value of industrial application.
