This paper elabrorates the principle and the features of microwave vacuum drying technology, the applications in the processing of agricultural products, and put forward their development situation. Microwave vacuum drying technology combines the fast and efficient of microwave drying with the low temperature of vacuum drying, and so it has faster speed and more efficiency than conventional vacuum, and also has less costing than freeze drying. Thus the conflicts between product quality and economic can be better solved in this way.
