以小黄蘑为原料,经过体积分数为50%的无水乙醇提取,获得了石油醚、乙酸乙酯、甲醇和水4种不同极性的提取物,并对这4种提取物的抑制亚硝化作用进行了研究.结果表明:4种提取物对亚硝胺均有阻断作用,随着小黄蘑提取物浓度的增加,其对亚硝胺的阻断作用逐渐增强.在低质量浓度范围内(0.5~4.0 g/L),石油醚、乙酸乙酯和甲醇提取物对亚硝胺的阻断作用均高于阳性对照 Vc 的阻断作用,石油醚、乙酸乙酯和甲醇提取物对亚硝酸盐的清除作用均高于同浓度的阳性对照 Vc 的清除效果;当质量浓度达到16 g/L 时,石油醚、乙酸乙酯、甲醇提取物的清除作用更强.提取物化学成分测定结果表明,乙酸乙酯和甲醇提取物抑制亚硝化作用的主要成分为皂苷和黄酮类物质.

With small yellow mushroom extract as raw material,petroleum ether extract,ethyl acetate extract,methanol extract and water extract was obtained through different polarity solvent extraction from 50% ethanol extracts. Inhibiting effects of nitrosation of four kinds of solvent extract were studied.The results showed that in the range of low concentration (0.5~4.0 g/L),nitrosamines blocking effects of petroleum ether extract,ethyl acetate extract and methanol extract of small yellow mushroom was higher than the positive effect of vitamin C.In the test range,with the increase of concentration of petroleum ether,ethyl acetate and methanol extract from small yellow mushroom, scavenging of sodium nitrite was gradually strengthened,when extract concentration reached to 16 g/L,the removal rate reach the maximum value.Extract chemical composition content determination results showed that the main component of ethyl acetate extract and methanol extract inhibited the nitrification were saponins and flavonoids substances.
