获得一种更准确测定鲜蒜、蒜片等大蒜产品中蒜素含量的方法。在传统测定蒜素的分光光度计方法的基础上引入外源纤维素酶,分解细胞组织结构中的纤维素,一方面使蒜氨酸与蒜氨酸酶充分接触反应生成蒜素,另一方面提高蒜素的提取率。加入纤维素酶后,鲜蒜与蒜片的蒜素得率分别比传统方法高30%和130%以上。纤维素酶加入后的改进方法较传统方法相比,能提高鲜蒜、蒜片中的蒜素得率。

@@@@Achieve a more accurate method to determine the yield of allicin in garlic product such as fresh garlic and garlic slice. Based on the traditional spectrophotometry assay to determine allicin ,exogenous cellulase were adopted to break down the cellulose in the cell tissue, on one side, the alliin was fully contacted with allinase, and allicin was finally obtained; on the other side, extraction efficiency was improved. With the exogenous cellulase, the yield of allicin in fresh garlic and garlic slice can be higher at least by 30 % and 130 %, respectively, than the traditional method . Compared with the traditional method, the advanced assay with exogenous cellulase can improve the yield of allicin in fresh garlic and garlic slice.
