@@@@The leaves of fluted pumpkins are rich in nutrition components. They are not only one source of plant proteins of high quality,but also have various physiological functions. This paper reviews their main nutrients and antioxidant substances by consulting relevant literatures. It systematically introduces the ingredients and their related healthcare function of fluted pumpkins leaves′ proteins,amino acids,vitamins,minerals,anti-oxidizing materials. Its purpose is to provide a scientific basis for promoting the cultivation of fluted pumpkin and the development and utilization of fluted pumpkin leaves as a resource of novel proteins and health food .
