对国家标准面食制品铝含量的测定方法加以改进,按照面制品中铝含量测定方法对样品进行前处理,采用石墨炉原子吸收光谱法测定铝含量,调查周口市部分市场油条产品铝的含量。结果表明:方法的线性良好,线性范围为0~0.05 mg/L,相关系数0.999。测试样品的RSD值为0.66%~4.11%,回收率为90.3%~108.3%。调查的结果显示,15个摊点15份油条样品的合格率仅为20.0%,周口市油条食品铝含量严重超标。

@@@@The paper improve the determination methods of aluminium content in flour products and the collected samples were pretreated following the method of the national standard of China , determined by graphite furnace atomic absorption spectrometry (GFAAS). The author invest the content of aluminium in twisted cruller of part markets in Zhoukou. The method had good linearity and the linear range was from 0 to 0.05 mg/L and the correlation coefficient was up to 0.999. The RSD of the test samples ranged from 0.66%to 4.11%and the average recoveries of samples were between 90.3%-108.3%. The investigation results indicated that the qualified rate of twisted cruller was only 20.0%, the aluminium content of twisted cruller in Zhoukou exceeded the allowed limit seriously.
