试验以“红栗2号”板栗为试材,以壳聚糖作为保鲜剂,研究了在-1~1℃的冷藏条件下,不同浓度壳聚糖对“红栗2号”板栗品质及理化指标的影响。结果表明:壳聚糖处理能够抑制淀粉酶和POD酶活性的下降,栗果腐烂率和失重率明显降低,且以1.5%浓度处理的效果最佳。壳聚糖涂膜处理能够保持板栗果实本身的抗衰老能力,延长了贮藏保鲜时间和最大限度地保持了板栗果实品质。
試驗以“紅慄2號”闆慄為試材,以殼聚糖作為保鮮劑,研究瞭在-1~1℃的冷藏條件下,不同濃度殼聚糖對“紅慄2號”闆慄品質及理化指標的影響。結果錶明:殼聚糖處理能夠抑製澱粉酶和POD酶活性的下降,慄果腐爛率和失重率明顯降低,且以1.5%濃度處理的效果最佳。殼聚糖塗膜處理能夠保持闆慄果實本身的抗衰老能力,延長瞭貯藏保鮮時間和最大限度地保持瞭闆慄果實品質。
시험이“홍률2호”판률위시재,이각취당작위보선제,연구료재-1~1℃적랭장조건하,불동농도각취당대“홍률2호”판률품질급이화지표적영향。결과표명:각취당처리능구억제정분매화POD매활성적하강,률과부란솔화실중솔명현강저,차이1.5%농도처리적효과최가。각취당도막처리능구보지판률과실본신적항쇠로능력,연장료저장보선시간화최대한도지보지료판률과실품질。
In order to increase the storage quality and prolong the storage time of red-chestunt No.2’kernel,the effects of chitosan on the‘red-chestunt No.2’kernel’s storage quality were studied on‘red-chestunt No.2’ker?nel under 0~±1℃ condition. The results :Decline of chitosan treatment can inhibit the activities of amylase and POD enzyme,chestnut fruit rot rate and weight loss rate decreased to 1.5%,and the concentration of the best effect. The chitosan coating treatment can keep the chestnut fruit itself anti- aging ability, extend the storage time and maintained a maximum of chestnut fruit quality.
