通过研究大米淀粉的酶解条件，比较了Seavg法和盐析法这两种除蛋白方式对测定大米淀粉含量的影响，并用旋光法测定了大米淀粉含量，得到了一种快速、经济、结果重现性好的测定大米淀粉含量的方法。
通過研究大米澱粉的酶解條件，比較瞭Seavg法和鹽析法這兩種除蛋白方式對測定大米澱粉含量的影響，併用鏇光法測定瞭大米澱粉含量，得到瞭一種快速、經濟、結果重現性好的測定大米澱粉含量的方法。

In this paper,we explored the enzymatic hydrolysis conditions of rice starch and compared the effect of two kinds of deproteinization method:Seavg method and salting out method on the determination of rice starch. We al-so determined the content of starch of rice by polarimetry. Ultimately,a rapid,low-price,high reproducible method was obtained to determine the content of starch of rice.
