通过研究大米淀粉的酶解条件,比较了Seavg法和盐析法这两种除蛋白方式对测定大米淀粉含量的影响,并用旋光法测定了大米淀粉含量,得到了一种快速、经济、结果重现性好的测定大米淀粉含量的方法。

In this paper,we explored the enzymatic hydrolysis conditions of rice starch and compared the effect of two kinds of deproteinization method:Seavg method and salting out method on the determination of rice starch. We al-so determined the content of starch of rice by polarimetry. Ultimately,a rapid,low-price,high reproducible method was obtained to determine the content of starch of rice.
