n-3和n-6多不饱和脂肪酸是必需脂肪酸，对于人类的健康是必要的。目前，饮食的结构中多为高含量的n-6多不饱和脂肪酸且n-3多不饱和脂肪酸含量偏低，由此产生n-6/n-3比例失衡，有可能导致心血管疾病、炎症、和癌症等疾病的产生。本文从多不饱和脂肪酸的摄取及代谢转化方面阐述其对于癌症及炎症疾病产生的影响，同时也对其作用机制和临床研究进展进行了探讨。
