采用复合酶辅助微波技术提取茶叶中的茶多酚,优化提取工艺。结果表明,复合酶解最佳工艺的纤维素酶用量为原料干物质重量的1%,果胶酶用量为原料干物质重量的0.5%,置于恒温60℃条件下,酶解30 min;微波提取最佳工艺以去离子水为提取溶剂,微波进料泵频率9 Hz,提取功率36 kW,物料比为1:10(m:m),提取1次,茶多酚的平均得率为25.19%。与其他提取方法相比,该法快捷、环保、选择性强。

Multiple enzymatic assisted microwave technology was used to extract tea polyphenols from Tea. The results showed that the optimal technology of multiple enzymatic was the cellulase dosage accounting for 1% dry raw material weight, pecti-nase dosage accounting for 0.5% dry raw material weight, and the extraction temperature of 60 ℃ for 30 min. The optimal condition for microwave extraction was using: distilled water as extraction solvent, feeding pump frequency of 9 Hz, the mi-crowave power of 36 kW, the proportion of raw material to solvent of 1:10 (m:m)and extraction once. Under the optimal con-dition, the extraction rate of tea polyphenols was 25.19%. Compared with other methods, it was rapid, environment friendly and selective.
