Capsaicin a vanilla amides alkaloid ,which is the main ingredients of the hot materials in chili pepper.Capsaicin has caused wide attention in food,agriculture,military and medicine fields because of its special physical property, chemical property and physiological activity.The researches on the purification,biological activity and application of capsaicin are summarized.Finally,the research prospect of capsaicin was also presented .
