采用半叶法对烟叶进行杀青干燥和冷冻干燥，分析2种干燥方式对烟叶形态和化学成分组成的影响。结果表明：（1）冷冻干燥后的烟叶呈鲜绿色，杀青干燥后的烟叶呈黄褐色，冷冻干燥后的烟叶体积（同样重量）是杀青法干燥后的烟叶的3.25倍；（2）杀青干燥的过程中，由于外界温度较高及烟叶内水分的耗散，造成烟叶中多酚和类胡萝卜素的降解转化，检测出美拉德反应产物9种和类胡萝卜素降解产物8种，同时损失了9种低分子香气物质，如：3-甲基丁醇、2-戊烯醇和3-戊烯醛等，总体造成干物质含量降低（与冷冻法相差4.37百分点）。冷冻干燥方式保持了烤烟烟叶的固有色泽、结构和内含物，是一种适合于化学成分准确检测的样品干燥方式。

Effects of drying methods on tobacco leaf morphology and chemical composition were investigated by half leaf method. Results showed that leaves obtained by freeze-drying were green, while that by de-enzyme torrefaction were yellow brown. Bulk size of the former is 3.25 times larger than that of the latter with the same weight. Polyphenols and carotenoids were degraded because of external high temperature stress and body water dissipation in the process of de-enzyme torrefaction. Nine Maillard reaction products and 8 carotenoid degradation products were detected, while 9 small molecular aromatic components disappeared, such as 3-methyl-butanol, 2-pentyl alcohol, 3-pentenal. Overall, dry matter loss during de-enzyme torrefaction processes showed 4.37% difference with that treated by freeze-drying. It was concluded that freeze-drying was a better sample drying method which could keep fresh leaf’s color and structure.
