研究建立了肉和肉制品中大肠杆菌的检验及计数方法,分别对金黄色葡萄球菌等9种阴性菌株和1种阳性菌株(大肠埃希氏菌(ATCC25922))进行了试验。结果发现,9种阴性菌株在纤维素乙酸酯膜上都没有菌落生长,而阳性菌株大肠埃希氏菌(ATCC25922)在纤维素乙酸酯膜上的菌落吲哚反应为阳性,试验结果没有出现假阳性或假阴性情况,方法准确性较高,特异性强。
研究建立瞭肉和肉製品中大腸桿菌的檢驗及計數方法,分彆對金黃色葡萄毬菌等9種陰性菌株和1種暘性菌株(大腸埃希氏菌(ATCC25922))進行瞭試驗。結果髮現,9種陰性菌株在纖維素乙痠酯膜上都沒有菌落生長,而暘性菌株大腸埃希氏菌(ATCC25922)在纖維素乙痠酯膜上的菌落吲哚反應為暘性,試驗結果沒有齣現假暘性或假陰性情況,方法準確性較高,特異性彊。

Meat and meat products are the main food in people's daily life due to the high quality nutrients of them. However, they are also liable to be contaminated by some kinds of harmful microbe, especially Escherichia coli. In this work, the examination and enumeration method of Escherichia coli for meat and meat products was established, and then 9 negative bacterial strains, such as staphylococcus aureus, and 1 positive bacterial strain [Escherichia coli (ATCC25922)] were examined. The results found that there was no bacterial colony growing on the cellulose acetate membrane for 9 negative bacterial strains, while the indole reaction for Escherichia coli is positive. More importantly, there were no false-positive and false-negative situations in the experimental results. This method not only has a high accuracy, but also has a strong specificity.
