以70%乙醇为溶剂,采用超声波辅助从紫蓝草中提取紫色素,并对该紫色素在不同pH、温度、光照、氧化剂、还原剂、不同金属离子条件下的稳定性进行检测。结果表明,紫蓝草紫色素易溶于水和乙醇,在酸性和中性溶液中稳定,温度、光照和还原剂对其稳定性没有影响,抗氧化能力弱,金属离子Fe3+对紫色素的稳定性有影响,而Na+、Zn2+、Cu2+离子对紫色素的稳定性没有影响。

이70%을순위용제,채용초성파보조종자람초중제취자색소,병대해자색소재불동pH、온도、광조、양화제、환원제、불동금속리자조건하적은정성진행검측。결과표명,자람초자색소역용우수화을순,재산성화중성용액중은정,온도、광조화환원제대기은정성몰유영향,항양화능력약,금속리자Fe3+대자색소적은정성유영향,이Na+、Zn2+、Cu2+리자대자색소적은정성몰유영향。
Taking 70%ethand as solvent, the purpurin were extracted from Peristrophe roxburghian by using ultrasonic assisted extraction.the stability of the pigment at various pH, temperature, light, oxidants, reducing agents and various metal ions conditions were detected. The results showed that, the purpurin were soluble easily in water and ethanol, stable in acidic and neutral solution, temperature, illuminationand reductive agen has no effect on its stability, weaker antioxidant capacity, Fe3+had a certain impact on the stability of Purpurin , Na+, Zn2+, Cu2+ had no effect on the stability of the Purpuri.
