以鄂北冬枣为试验材料，在低温条件下分别采用0.5%、1.0%、1.5%的 CaCl2溶液对果实进行浸泡处理，研究 CaCl2处理对鄂北冬枣采后生理和贮藏品质的影响。结果表明，与对照相比，钙处理抑制了采后冬枣果实的可溶性固形物含量、可滴定酸含量、维生素 C 含量和硬度的下降，钙处理的果实其呼吸速率和丙二醛（MDA)活性较对照降低，超氧化物歧化酶（SOD)、过氧化物酶（POD)、过氧化氢酶（CAT)活性较对照提高，从而延缓了果实成熟衰老进程，较好地保持了果实的品质。 CaCl2溶液3个浓度处理中，以1.5% CaCl2溶液处理效果较好。

The winter jujube produced in northern Hubei was used to study the effects of CaCl2 (0.5%, 1%,1.5%) on the quality and physiology when stored at low temperature. The results showed that treatments of CaCl2 on winter jujube could in-hibit the decline of soluble solids content, titratable acid content,Vc content and firmness compared with control group. The respiration rate and MDA activity of fruit treated were decreased, while SOD,POD,CAT activity were increased, delaying the process of maturity and senility of the fruits and keeping their quality effectively. Among the three concentrations, the CaCl2 content of 1.5% was the best.
