虾青素是自然界发现的抗氧化能力最强的生物制剂，近几年来天然虾青素的国内外提取分离方法有很大发展，其中，用于提取的负压空化法、酶解法、超临界流体萃取法、微波处理提取法作为一些新兴的方法，目前已经逐步开始应用于工业生产；在分离纯化方面，层析法应用最为广泛，HPLC法分离效果更好，但成本较高。
