分析了新疆产平菇中氨基酸和多糖含量。结果表明新疆产平菇子实体中氨基酸和多糖含量分别为24.69%和6.3%。在平菇子实体中含有17种氨基酸，其中谷氨酸（5.50%）含量最高，其次含量较高的为天门冬氨酸（2.59%）、苏氨酸（1.38%）、丝氨酸（1.45%）、甘氨酸（1.21%）、丙氨酸（1.67%）、缬氨酸（1.26%）、亮氨酸（1.75%）、酪氨酸（1.02%）、苯丙氨酸（1.39%）、赖氨酸（1.71%）、精氨酸（1.84%）。

The content of amino acid and polysaccharides in Pleurotus ostreatus from Xinjiang is investigated and compared. The result indicated amino acid and polysaccharides in Pleurotus ostreatus from Xinjiang was24.69%and 6.3%. The higher levels of amino acids in Pleurotus ostreatus is glutamic acid (55.0%), aspartic acid (2.59%), threonine (1.38%), serine (1.45%), glycine (1.21%), alanin e (1.67%), valine (1.26%), leucine (1.75%), tyrosine (1.02%), phenylalanine (1.39%), lysine e(1.71%) and argnine (1.84%). Content of glutamic acid in the kind of mushrooms is the highest.
