利用Fenton反应产生羟自由基(·OH),加入柠檬黄显色剂,·OH与显色剂发生作用使柠檬黄褪色,用分光光度计测定其ΔA值的变化,从而间接测定产生羟自由基的量.对抗坏血酸、盐酸羟胺在不同溶剂中的抗羟基自由基氧化性能进行了比较.结果表明:抗坏血酸、盐酸羟胺50%乙醇溶液的抗氧化能力比抗坏血酸、盐酸羟胺水溶液的抗氧化能力强.4种体系中的回收率:抗坏血酸、盐酸羟胺50%乙醇溶液的回收率分别为106.6%、102.4%,抗坏血酸、盐酸羟胺水溶液的回收率分别为92.2%、94.0%.

The hydroxyl free radicals which are produced by Fenton reaction can make the lemon yellow fade to measure the discharge of hydroxyl free radicals indirectly. Through the research of the determination conditions, optimum experiment conditions are obtained. And the article makes a comparison of the performance of different solution of Ascorbic acid and hydroxylamine hydrochloride on the resistance to the hydroxyl free radical oxidation .Results showed that the antioxidant capacity of the 50 %ethanol solution of ascorbic acid and hydroxylamine hydrochloride is better than the aqueous solution of ascorbic acid and hydroxylamine hydrochloride .The recovery rate of 50% ethanol solution of the ascorbic acid and hydroxylamine hydrochloride are 106.6 %, 102.4 % respectively. The recovery rate of the aqueous solution of ascorbic acid and hydroxylamine hydrochloride are 92.2%, 94.0%respectively.
