研究了超声波辅助提取西瓜皮多糖的最佳工艺及其抗氧化性.结果表明,超声波辅助提取西瓜皮多糖的最佳条件为:料液比1∶50、超声波温度60℃、超声波功率350 W、超声波时间20 min.西瓜皮多糖对·OH和O2-·清除作用明显,具有一定的还原力,表明西瓜皮多糖具有较好的抗氧化活性.

Ultrasonic-assisted extraction of polysaccharides from watermelon peel was optimized and the antioxidant activity of the extract was also studied. According to orthogonal design, the optimum condition for the extraction of polysaccharide were as follows:1∶50 of solid-solvent ratio, 60℃ of ultrasonic temperture, 350 W of ultrasonic power, 20 min of ultrasonic time. The fact that watermelon peel polysaccharides exhibited strong scavenging effects against ·OH and O2-·excellent reducing power, demonstrates good antioxidant activi-ty of the polysaccharides.
