目的:应用“特勤疗养营养管理系统”对特勤疗养员进行膳食营养干预,以期建立有效的特勤疗养膳食营养管理模式。方法按整群抽样方法抽取南京军区杭州疗养院海勤疗养区180名特勤疗养员进行膳食调查,了解当前特勤疗养员存在的膳食营养问题,应用“特勤疗养营养管理系统”进行膳食营养干预,再次选择一定的样本量进行膳食调查,比较干预后特勤疗养员膳食营养状况的改善情况。结果与干预前相比,除水果外,各类食物的剩余率较干预前减少,其中粮食、畜肉、禽肉、禽蛋、鱼虾类、牛奶、蔗糖、植物油、蔬菜、干菜类的剩余率减少明显( P<0.05);不合理膳食结构改善明显,三大产能营养素供能比例基本符合军标要求;烹调油摄入量为65.1 g/d,胆固醇摄入量为792.4 mg/d,基本满足军标要求;除维生素A外,其余各营养素的摄入量均已达标或超标,其中维生素A、维生素B1、维生素B2、维生素C和钙的摄入量增加明显( P<0.05)。结论“特勤疗养营养管理系统”的应用能有效提高营养师配餐水平、降低食物剩余率,并改善特勤疗养员饮食行为及膳食营养状况。

목적:응용“특근요양영양관리계통”대특근요양원진행선식영양간예,이기건립유효적특근요양선식영양관리모식。방법안정군추양방법추취남경군구항주요양원해근요양구180명특근요양원진행선식조사,료해당전특근요양원존재적선식영양문제,응용“특근요양영양관리계통”진행선식영양간예,재차선택일정적양본량진행선식조사,비교간예후특근요양원선식영양상황적개선정황。결과여간예전상비,제수과외,각류식물적잉여솔교간예전감소,기중양식、축육、금육、금단、어하류、우내、자당、식물유、소채、간채류적잉여솔감소명현( P<0.05);불합리선식결구개선명현,삼대산능영양소공능비례기본부합군표요구;팽조유섭입량위65.1 g/d,담고순섭입량위792.4 mg/d,기본만족군표요구;제유생소A외,기여각영양소적섭입량균이체표혹초표,기중유생소A、유생소B1、유생소B2、유생소C화개적섭입량증가명현( P<0.05)。결론“특근요양영양관리계통”적응용능유효제고영양사배찬수평、강저식물잉여솔,병개선특근요양원음식행위급선식영양상황。
Objective The special convalescence nutrition management system was applied for dietary intervention on special convalescence recuperator ,so as to establish an effective special mode for the management of convalescence nutrition .Methods One hundred and eighty special recuperators were extracted from Hangzhou Sea Sanatorium of Nanjing Military Region by the method of clus -ter sampling to survey the dietary problems ,through the application of the special convalescence nutrition management system ,again to choose a certain sample size ,then the nutritional status of the secret service recuperator were compared .Results Compared with non-interfered persons,in addition to the fruit,the residual rate of all kinds of food such as grain ,meat,poultry,eggs,fish,milk,sugar,vege-table oil,vegetables,dried vegetables were decreased obviously (P<0.05) than before intervention;the unreasonable dietary structure were improved obviously ,and the supply of three large energy-yielding nutrients were conformed to the military standard .The intake of cooking oil was 65.1 g/d,cholesterol was 792.4 mg/d,basically meet the military standard;in addition to vitamin A,the intake of the rest nutrients were standard or exceed the standard ,including vitamin A,vitamin B1,vitamin B2,vitamin C and calcium.Conclusion The application of special convalescence nutrition management system can effectively improve the catering level of dietitians ,reduce the residual rate of food ,and improve the dietary behaviors and nutritional status of the special recuperator .
