采用碱溶酸沉法提取桃仁蛋白,并采用正交试验确定最佳提取工艺,试验对桃仁蛋白的溶解性和吸油性进行测定。结果表明,桃仁蛋白的最佳提取工艺为pH值10,料液比1∶30,提取温度40℃,提取时间75 min,桃仁蛋白的最佳提取率为24.06%。测定溶解性表明,温度为50℃时桃仁蛋白溶解度最大;测定吸油性表明,静置时间为50 min时,吸油性最大。

채용감용산침법제취도인단백,병채용정교시험학정최가제취공예,시험대도인단백적용해성화흡유성진행측정。결과표명,도인단백적최가제취공예위pH치10,료액비1∶30,제취온도40℃,제취시간75 min,도인단백적최가제취솔위24.06%。측정용해성표명,온도위50℃시도인단백용해도최대;측정흡유성표명,정치시간위50 min시,흡유성최대。
In this paper,through alkaline extraction and acid precipitation,the protein from peach kernel is extracted to determine the optimum process conditions of extracting peach kernel protein by single factor and orthogonal experiments. And the solubility and oil absorption capacity are also measured. The optimal extraction conditions are:pH 10,the ratio of meal to solvent 1∶30,temperature 40 ℃and 75 min. Under these conditions,the extraction yield is 24.06%. Determination of solubility shows that when the temperature is 50 ℃,peach protein solubility is maximum;determination of oil absorption capacity show that:when holding time is 50 min,oil absorption is maximum.
