The study onrheologicalproperties of three different extraction conditions including the original process,mixing enrichment and negative pressure concentrated extract. The research include:static rheological properties,thixotropic characteristics,the dynamic rheological properties and the gel point and melting point. Compared the features and rheological properties of different extracted process can provide theoretical basis for industrialized production.
