以人参片为原料,采用微波辅助浸渍工艺作为生产人参脆片的前处理工艺。在单因素试验基础上,以增质量率为考核指标,采用3因素3水平响应面分析法优化最佳浸渍工艺。结果表明,微波浸渍功率、麦芽糊精质量分数、浸渍时间均对增质量率具有极显著的影响。当微波浸渍功率800 W,麦芽糊精质量分数15%,浸渍时间40 s时的增质量率最大,达56.76%。

Raw materials are made from ginseng slices,using microwave-assisted impregnation process as the pre-treatment to product ginseng chips. The process is optimized using a three-variable,three-level response surface design. The results show that: the microwave power,concentration of maltodextrin,impregnation time is extremely significant effect on the rate of growth rate. When the microwave power is 800 W,concentration of maltodextrin is 15%,impregnation time is 40 s,the maximum rate of growth rate is 56.76%.
