酶抑制比色法是近年来迅速发展起来的食品中重金属残留检测的方法之一.与传统的方法相比,酶抑制法具有快速、简便、对所分析的样品需要量少等优点.本文研究了重金属Pb2+、Cu2+、Ag+对葡萄糖氧化酶的抑制,采用酶抑制比色法实现了对Pb2+、Cu2+、Ag+金属离子的检测.在优化的条件下,Pb2+、Cu2+、Ag+分别在10~100μmol/L、4~80μmol/L、10~100μmol/L范围内其浓度与响应信号呈良好的线性关系(相关系数均在0.99以上).Pb2+、Cu2+、Ag+的检出限分别为0.53、0.21和0.18μmol/L.

Enzyme inhibition colorimetric method is an important method devolved in recent years for detec-tion of the heavy metal ions in food and environment .Compared with those traditional methods , the method has many advantages , such as rapid , much simpler and less samples required .In this study , the concentration of Pb2+, Cu2+and Ag +were detected using the glucose oxidase ( GOD) inhibition colorimetric method which indigo carmine served as an indicator .Under the optimum conditions , the detection linear range of Pb 2+, Cu2+and Ag +with present proposed method was 10~100, 4~80 and 10~100 μmol/L, and the detection limit down to 0.53, 0.21 and 0.18 μmol/L, respectively.
