目的:研究电子鼻在不同市售醉鱼干挥发性物质识别中的应用。方法以5种不同的市售醉鱼干为研究对象,利用电子鼻对其挥发性物质进行识别,并对采集数据进行主成分分析和判别因子分析。结果采用主成分分析可区分不同生产厂家的醉鱼干,区分指数为94;采用判别因子分析样品分散度较好,且产地对醉鱼干挥发性物质的形成仍具有一定影响。结论电子鼻能较好地识别不同市售醉鱼干的挥发性物质,具有较好的应用前景。

목적:연구전자비재불동시수취어간휘발성물질식별중적응용。방법이5충불동적시수취어간위연구대상,이용전자비대기휘발성물질진행식별,병대채집수거진행주성분분석화판별인자분석。결과채용주성분분석가구분불동생산엄가적취어간,구분지수위94;채용판별인자분석양품분산도교호,차산지대취어간휘발성물질적형성잉구유일정영향。결론전자비능교호지식별불동시수취어간적휘발성물질,구유교호적응용전경。
Objective To study the discrimination of flavor substance of dried drunk fish by electronic nose. Methods The 5 kinds of dried drunk fish sold in supermarket were detected by electronic nose, and the collected data were analyzed by using principal component analysis and discriminant factor analysis. Results The test samples were distinguished from each other by principal component analysis very well (discrimination index 94) and comparison with discriminant factor analysis showed that the test samples had a good dispersion, but there were certain limitations on discrimination against different regions. Conclusion It is feasible that electronic nose can identify the differences between different manufacturers of dried drunk fish sold in supermarket very well and will have a good application prospect.
