活性氧自由基是生物机体在生命活动过程中产生的一种中间产物，具有很高的反应活性，许多疾病、生命的衰老（特别是衰老性疾病）都涉及到活性氧自由基反应。综述了水果的抗氧化作用机理及水果中具有抗氧化作用的主要成分。归纳了常用的抗氧化评价方法及测定方法。提出了对水果整体合理利用的希望。

Reactive oxygen species were organisms in the process of life activity producing an intermediate product , and had very high reactivity , many diseases , the aging of life ( especially the diseases of aging ) involved free radical reaction.The oxidation mechanism of fruit and antioxidant come from fruit were reviewed.Commonly used antioxidant evaluation and determination methods were generalized.The hope of the full use of fruit was raised.
