本研究分别通过直接滴定法和黄酒中总糖测定方法(亚铁氰化钾滴定法)测定了葡萄酒中总糖的含量。经过多次实验测定以及参与能力验证,结果分析得出亚铁氰化钾滴定法较适用于测定葡萄酒中的总糖含量。此法去除了干红葡萄酒颜色的干扰,准确性高、快速、易于掌握,可作为葡萄酒中总糖测定的常规检测方法。

In this study the Total sugar content was measured in Wine respectively by direct titration method and the determination method of total sugar in yellow rice wine (potassium ferrocyanide titration method). After many experiments to determine, and the ability to participate in verification, the results analysis showed that ferrous potassium cyanide titration method is more applied to determination of total sugar content in wine. This method, without the dry red wine color interference and with the advantage of high accuracy, fast, easy to master, can be used as a conventional detection method for the determination of total sugar in the wine.
