以番茄皮渣为原料,利用微生物发酵法制备可溶性膳食纤维,探讨接种量、培养时间、培养温度及pH对膳食纤维得率的影响。在单因素实验的基础上,选取三因素三水平进行响应面分析,以SDF得率为响应值进行发酵工艺优化。通过响应面实验确定制备番茄皮渣膳食纤维的最佳工艺条件为:接种量0.2%、发酵温度24℃、pH 4,此条件下番茄皮渣可溶性膳食纤维得率达39.02%。此外,研究发现SDF在60℃、pH 7条件下溶解度最高。

In order to develop an optimal preparation of water soluble dietary fiber from tomato pomace by microbial fermentation,the effect of factors,such as inoculum size,fermentation time,fermentation temperature and original pH were investigated,respectively. On the basis of single factor,Response Surface Design(RSD)was applied to find the optimum extracting conditions for SDF. Results showed that the optimum preparation procedure was based on 24℃fermentation with ainoculum size of 0.2%at pH 4. Under these conditions,the yield of dietary fiber reached 39.02%. In addition,thesolubility of SDF reached the highest at 60℃and pH 7.
