a-淀粉酶抑制剂(AAI)具有明显的降血糖和减肥功效。本研究利用超声波技术提取白芸豆中的AAI,探讨了碱液浓度、液固比、超声温度、超声功率和超声时间5个因素对AAI产量的影响,通过正交实验,确定了最佳工艺参数为:超声温度37℃、超声功率110 W和超声时间20 min。超声波技术可以快速高效地提取白芸豆中的AAI,并保持其生物活性,具有绿色环保的现实意义。

Alpha amylase inhibitor (AAI) plays a role in regulating blood sugar and reducing weight obviously. Ultrasound was utilized to extract AAI from white kidney bean in this investigation. A serious of factors including base concernment, liquid-solid ratio, ultrasound temperature, ultrasound power and ultrasound time were analyzed about their effects on the yield of AAI. On that basis, the subsequent orthogonal experiment was carried out to optimize the following process parameters: ultrasonic temperature 37 ℃, ultrasonic power 110 W and ultrasonic time 20 min. Ultrasound extraction technology could quickly and efficiently extract AAI from white kidney bean and keep its bioactivity, which will play the practical significance to the environmental protection.
