采用响应曲面法( RSM)研究了酶浓度、酶解温度和酶解时间对豆腐渣中水不溶性膳食纤维提取率。实验结果表明豆腐渣中水不溶性膳食纤维最佳提取工艺条件为:酶浓度4%,酶解温度60℃,酶解时间5 h,在此条件下水不溶性膳食纤维提取率为56.27%。
採用響應麯麵法( RSM)研究瞭酶濃度、酶解溫度和酶解時間對豆腐渣中水不溶性膳食纖維提取率。實驗結果錶明豆腐渣中水不溶性膳食纖維最佳提取工藝條件為:酶濃度4%,酶解溫度60℃,酶解時間5 h,在此條件下水不溶性膳食纖維提取率為56.27%。

The extraction rate of insoluble dietary fiber ( IDF) was evaluated by response surface method ( RSM) with different addition of enzyme concentration , reaction temperature and hydrolysis time.The results showed that the optimal extraction conditions were enzyme concentration of 4%, reaction temperature of 60℃and hydrolysis time of 5 h.In conditions of the optimal extraction , the extraction rate of IDF was 56.27%.
