采用响应曲面法（ RSM）研究了酶浓度、酶解温度和酶解时间对豆腐渣中水不溶性膳食纤维提取率。实验结果表明豆腐渣中水不溶性膳食纤维最佳提取工艺条件为：酶浓度4％，酶解温度60℃，酶解时间5 h，在此条件下水不溶性膳食纤维提取率为56.27％。

The extraction rate of insoluble dietary fiber ( IDF) was evaluated by response surface method ( RSM) with different addition of enzyme concentration , reaction temperature and hydrolysis time.The results showed that the optimal extraction conditions were enzyme concentration of 4%, reaction temperature of 60℃and hydrolysis time of 5 h.In conditions of the optimal extraction , the extraction rate of IDF was 56.27%.
