In order to provide references for solving the problem of the quality and safety of edible fungus, the study situation of some toxic and harmful substances, such as heavy metal, pesticides, food additives, chemicals and microbial toxins, etc. in the process of edible fungus production and processing were summarized. The main problems related were analyzed and discussed.
