为了初步评价蛹肽蛋白作为大菱鲆新型蛋白源的可行性,本试验测定了水洗或醇洗以及未处理蛹肽蛋白的常规营养成分和氨基酸组成,并与秘鲁红鱼粉进行比较;同时以大菱鲆鱼体氨基酸作为参比,综合运用氨基酸分(AAS)、化学分(CS)、必需氨基酸指数(EAAI)、氨基酸比值系数(RC)和氨基酸比值系数分(SRC)5个指标进行氨基酸平衡性分析。结果显示:蛹肽蛋白粗蛋白质含量均在54%以上,粗脂肪不同处理间差异较大,灰分含量均低于鱼粉。处理后除脯氨酸外,其余氨基酸含量均有所上升。AAS与CS的结果相似,均为鱼粉>水洗>醇洗>未处理。各种处理蛹肽蛋白的第一限制性氨基酸均为含硫氨基酸,其他限制性氨基酸主要是赖氨酸、精氨酸、苏氨酸。蛹肽蛋白EAAI较高,为97.01~97.86,但略低于鱼粉(99.72);而SRC为77.26~79.18,同样也低于鱼粉(83.10)。综上所述,蛹肽蛋白是一种高蛋白、高能量,氨基酸平衡性较好,有望替代大菱鲆饲料中鱼粉的新型蛋白源。

To evaluate the feasibility of applying fermented silkworm pupae as the new protein source for turbot ,basic nutrition composition and amino acid composition of water-washed,alcohol-washed and untreated silkworm pupae were tested and compared with Peru red fishmeal.Five indexes,i.e. amino acid score (AAS),chemical score (CS),essential amino acid index(EAAI),ratio coefficient(RC),score of ratio coefficient(SRC),were employed to analysis the balance of amino acid with a reference to the whole body amino acid composition of turbot.The results showed that crude protein was over 54%in all types of treatment silkworm pupae;crude lipid varied among treatments;crude ash content was lower than fishmeal.The absolute contents of all amino acids were higher than that after treatment except for proline.AAS and CS showed similar results:fish meal>water-washed>alcohol-washed>untreated.The first limiting amino acid was sulfur-con-taining amino acid with lysine,arginine,and threonine as other limiting amino acids.EAAI was relatively high in silkworm pupae,ranging from 97.01 to 97.96,whereas was slightly lower than that of fishmeal (99.72).Similarly,SRC rangeed be-tween 77.26 and 79.18,and was inferior to fishmeal(83.10).In conclusion,fermented silkworm pupae was a promising sub-stitution for fish meal with high protein,high energy,and well-balanced amino acid composition in the feed of turbot.
