对赤霞珠葡萄进行不同方式疏穗，研究其对葡萄果实发育与基本品质的影响。结果表明：疏穗能够提高葡萄果实的pH值、总酚、单宁和花色苷含量，降低含酸量，影响果粒质量。疏上穗能显著增加pH和总酚含量，降低总酸和可溶性固形物含量，减轻果粒质量。疏下穗处理的葡萄果粒明显比其它处理的葡萄果粒小，单宁、总花色苷和五种单体花色苷含量高。

Different cluster-thinning methods on grape were used to study the effects of the methods on the growth and quality of wine grape.The results showed that cluster-thinning could increase grape pH,and content of total polyphenol,tannin and anthocyanin,decrease the content of titratable acid,no effect on single berry’s weight;Method of cut top cluster can increase grape pH and total polyphenol significantly,decrease the content of titratable acid,soluble solids and single berry’s weight;Grape has smallest size through method of cut below cluster,higher content of tannin and anthocyanin more than other grape berries.
