应用HS-SPME(顶空-固相微萃取)结合GC-MS(气相色谱-质谱)技术对浓香型大曲制曲过程中挥发性成分进行了动态分析。在浓香型大曲中共检测到54种挥发性成分,其中烃类5种,醇类10种,酯类8种,醛类4种,酮类2种,酸类8种,含氮化合物6种,芳香族化合物4种,酚类化合物5种,呋喃类化合物2种。大部分挥发性成分含量呈现先增后减的趋势,在8d时达到最大值,随后下降,到贮存后期含量趋于稳定。
應用HS-SPME(頂空-固相微萃取)結閤GC-MS(氣相色譜-質譜)技術對濃香型大麯製麯過程中揮髮性成分進行瞭動態分析。在濃香型大麯中共檢測到54種揮髮性成分,其中烴類5種,醇類10種,酯類8種,醛類4種,酮類2種,痠類8種,含氮化閤物6種,芳香族化閤物4種,酚類化閤物5種,呋喃類化閤物2種。大部分揮髮性成分含量呈現先增後減的趨勢,在8d時達到最大值,隨後下降,到貯存後期含量趨于穩定。
응용HS-SPME(정공-고상미췌취)결합GC-MS(기상색보-질보)기술대농향형대곡제곡과정중휘발성성분진행료동태분석。재농향형대곡중공검측도54충휘발성성분,기중경류5충,순류10충,지류8충,철류4충,동류2충,산류8충,함담화합물6충,방향족화합물4충,분류화합물5충,부남류화합물2충。대부분휘발성성분함량정현선증후감적추세,재8d시체도최대치,수후하강,도저존후기함량추우은정。
In this study, dynamic analysis of the volatile components in Nongxiang Daqu during Daqu-making process was carried out by use of HS-SPME coupled with GC-MS. 54 kinds of volatile components were detected including 5 hydrocarbons, 10 alcohols,8 esters ,4 aldehydes, 2 ketones, 8 acids,6 nitrogen-containing compounds,4 aromatic compounds,5 phenols and 2 furans. Most volatile components content increased firstly at the beginning of Daqu-making and reached the highest value at the 8th day, and then dropped slowly and kept stable in the late storage period.
