以橡子壳为原料提取色素,研究橡子壳色素的稳定性.通过响应面试验,确定了橡子壳色素的最佳提取工艺条件:液料比45∶1(mL ∶ g)、乙醇体积分数52.25%、超声功率70 W、超声时间28.25 min.在此条件下橡子壳色素的吸光度为0.69,与模拟预测值高度吻合.橡子壳色素的耐光性、耐氧化性和耐热性较好,在酸性和中性条件下比较稳定;碱性溶液和还原剂对橡子壳色素影响较大.该试验结果可为橡子壳色素的开发利用提供一定的理论基础.

The stability of the pigment extracted from acorn shell were studied. The optimal extraction conditions of acorn shell pigment were determined by response surface methodology. The liquid-solid ratio is 45 ∶ 1(mL ∶ g), ethanol volume fraction of 52. 25%, ultrasonic power of 70 W and ultrasonic time of 28. 25 min. Under the conditions,the absorbance of the acorn shell pigment was 0. 69, the result was consistent with the simulated predictive value. This pigment was resistant to light,oxidant and heat. And it had good stability under the acid and neutral conditions. The alkaline solution and reductant had a greater impact on the stability of acorn shell pigment. The test results could provide a theoretical basis for the development and utilization of acorn shell pigment.
