花青素是一类广泛存在于植物的花、果、茎、叶和种子中的水溶性天然色素，具有很高生物活性的黄酮多酚类化合物，对人体无毒副作用。近年来，众多学者对花青素做了较为详细深入的研究。回顾了目前花青素的研究成果，力求为进一步研究开发花青素生物活性提供资料。
花青素是一類廣汎存在于植物的花、果、莖、葉和種子中的水溶性天然色素，具有很高生物活性的黃酮多酚類化閤物，對人體無毒副作用。近年來，衆多學者對花青素做瞭較為詳細深入的研究。迴顧瞭目前花青素的研究成果，力求為進一步研究開髮花青素生物活性提供資料。

Anthocyanin is a kind of flavonoid polyphenols with high biological activities , and it is wide-ly distributed in plants flowers ,fruits, stems, leaves and seeds of the water-soluble natural pigments in nature . In recent years , many researchers have done a lot of in-depth studies on anthocyanin .This paper summarizes the physiological role of anthocyanins research , and strive to provide information for the development and fur-ther study the biological activity of anthocyanins .
