为阐明霉变烟叶和正常烟叶化学组成的差异,用氨基酸分析仪法测定了初烤烟叶中17种游离氨基酸的含量。结果表明:①正常烟叶的游离氨基酸总量是霉变烟叶的3.6倍;②正常烟叶中脯氨酸含量最高,占总量的75.58%;霉变烟叶中含量较高的是天冬氨酸、组氨酸、谷氨酸和苯丙氨酸,四者之和占总量的68.69%;③脯氨酸、天冬氨酸、组氨酸、谷氨酸和苯丙氨酸在两种烟叶中的差异较大。游离氨基酸总量降低以及特定游离氨基酸含量的变化可作为烟叶霉变识别的生物标记。
為闡明黴變煙葉和正常煙葉化學組成的差異,用氨基痠分析儀法測定瞭初烤煙葉中17種遊離氨基痠的含量。結果錶明:①正常煙葉的遊離氨基痠總量是黴變煙葉的3.6倍;②正常煙葉中脯氨痠含量最高,佔總量的75.58%;黴變煙葉中含量較高的是天鼕氨痠、組氨痠、穀氨痠和苯丙氨痠,四者之和佔總量的68.69%;③脯氨痠、天鼕氨痠、組氨痠、穀氨痠和苯丙氨痠在兩種煙葉中的差異較大。遊離氨基痠總量降低以及特定遊離氨基痠含量的變化可作為煙葉黴變識彆的生物標記。

In order to find out the differences of chemical components between mildewed and normal tobacco leaves, the contents of 17 free amino acids in cured tobacco leaves were determined by an amino acid analyzer. The results showed that: 1) The total amount of free amino acids in normal leaves was 3.6 times of that in mildewed leaves. 2)Proline was the major amino acid and accounted for 75.58% of total amino acids in normal leaves. Whereas the major amino acids in mildewed leaves were aspartic acid, histidine, glutamic acid and phenylalanine, which accounted for 68.69% of total amino acids. 3) The contents of proline, aspartic acid, histidine, glutamic acid and phenylalanine differed more obviously between mildewed and normal leaves. Therefore, the decrease of total amount of free amino acids and the variation of some free amino acids can be used as the biomarkers in mildewed tobacco leaf identification.
