目的:针对目前食品添加剂亚硫酸盐的滥用现象,寻找出可靠的现场快速测定方法,应用于食品中二氧化硫的现场快速检测。方法从市售二氧化硫快速检测试剂盒中筛选出性能较好的两款产品,分别进行线性、稳定性、检出限测试,并选择易滥用亚硫酸盐的陈粮、米粉等10种食品基质进行加标测试,从阳性对照、与国标方法比对、干扰实验等方面进行比较分析。结果两款试剂盒的线性、稳定性、检出限、加标测试结果良好;在实测的10种食品基质中,陈粮、米粉等7种基质的测定效果良好,鱼糜、冻虾基质会出现阳性干扰;但两款二氧化硫快速试剂盒均不适用于烤虾基质的测定,其结果显示假阴性。结论两款试剂盒均能满足大部分食品中二氧化硫现场快速测定的需求。

목적:침대목전식품첨가제아류산염적람용현상,심조출가고적현장쾌속측정방법,응용우식품중이양화류적현장쾌속검측。방법종시수이양화류쾌속검측시제합중사선출성능교호적량관산품,분별진행선성、은정성、검출한측시,병선택역람용아류산염적진량、미분등10충식품기질진행가표측시,종양성대조、여국표방법비대、간우실험등방면진행비교분석。결과량관시제합적선성、은정성、검출한、가표측시결과량호;재실측적10충식품기질중,진량、미분등7충기질적측정효과량호,어미、동하기질회출현양성간우;단량관이양화류쾌속시제합균불괄용우고하기질적측정,기결과현시가음성。결론량관시제합균능만족대부분식품중이양화류현장쾌속측정적수구。
ObjectiveTo find out reliable analytical methods for field rapid detection of sulfur dioxide (SO2) in food matrices, aiming to administrate the abuse of sulfite as food additives.MethodsTwo products with relatively better performance were picked out from various commercially available SO2 rapid detection kits. Their individual linearity, stability and detection limit were tested. Then recovery, positive control, com-parison with national standardized method and interference test of those two kits were monitored by spiking into 10 different food matrices including old crop and rice noodle, in which sulfite was more frequently abused. ResultsIt was found that both of the two selected kits showed a good linearity, stability, sensitivity and re-covery in standard solutions. Among those 10 spiked food matrices, good performance results were obtained in 7 matrices including old crop and rice noodle, while false positive results induced by matrix interference oc-curred in minced fish and frozen shrimp. However, the two kits were found to be not suitable for rapid detection of roast shrimp since false negative results were obtained.ConclusionBoth of the two kits can meet the re-quirements for field rapid detection of SO2 in most food matrices.
