比较了浸提法、热煮法、粉碎法等3种方法提取杨梅色素苷的提取量,并对其抗氧化性能进行了研究。结果表明:浸提法提取效果最好,在510 nm处的吸光度为0.198,而粉碎法为0.054;杨梅色素苷浓度与其抗氧化能力、超氧阴离子自由基及羟基自由基的清除能力之间存在明显正相关,当杨梅色素苷浓度为34 mg·mL-1时,其对超氧阴离子自由基的清除率达到80%;相同浓度下杨梅色素苷的还原力高于抗坏血酸。
比較瞭浸提法、熱煮法、粉碎法等3種方法提取楊梅色素苷的提取量,併對其抗氧化性能進行瞭研究。結果錶明:浸提法提取效果最好,在510 nm處的吸光度為0.198,而粉碎法為0.054;楊梅色素苷濃度與其抗氧化能力、超氧陰離子自由基及羥基自由基的清除能力之間存在明顯正相關,噹楊梅色素苷濃度為34 mg·mL-1時,其對超氧陰離子自由基的清除率達到80%;相同濃度下楊梅色素苷的還原力高于抗壞血痠。
비교료침제법、열자법、분쇄법등3충방법제취양매색소감적제취량,병대기항양화성능진행료연구。결과표명:침제법제취효과최호,재510 nm처적흡광도위0.198,이분쇄법위0.054;양매색소감농도여기항양화능력、초양음리자자유기급간기자유기적청제능력지간존재명현정상관,당양매색소감농도위34 mg·mL-1시,기대초양음리자자유기적청제솔체도80%;상동농도하양매색소감적환원력고우항배혈산。
The extraction amounts of arbutus pigment by leaching method,cooking method and grinding method were compared.The antioxidant activity of arbutus pigment was studied.Results showed that the leac-hing method was the most effective extraction method with the absorption value of 0.198 at 510 nm,while the grinding method was 0.054.There were obviously positive correlations between arbutus pigment concentration and antioxidant capacity,superoxide anion radical scavenging capacity,hydroxyl radical scavenging capacity. When arbutus pigment concentration was 34 mg·mL-1 ,the scavenging rate of superoxide anion radical reached 80%.The reduction ability of arbutus pigment was higher than that of ascorbic acid at the same concentration.
