利用旋转流变仪和毛细管流变仪研究葡萄糖浆溶液的流变性能,并对其流变学法则的适用性进行了探讨.结果表明:糖浆溶液具有明显的线性粘弹区域;在一定的剪切速率(≤1000 s-1)或者是振荡频率(≤1000 rad/s)范围内糖浆溶液符合 Cox-Merz 法则;牛顿流体模型适用于剪切速率低于400 s-1时的数据拟合,其标准误差σ约2.4;Cross 模型适用于全范围内的流变规律拟合,标准误差σ约6.5.糖浆溶液在剪切速率低于1000 s-1时,剪切粘度基本不变,表现出牛顿性;剪切速率高于1000 s-1时,出现明显的切力变稀行为,表现出假塑性.
利用鏇轉流變儀和毛細管流變儀研究葡萄糖漿溶液的流變性能,併對其流變學法則的適用性進行瞭探討.結果錶明:糖漿溶液具有明顯的線性粘彈區域;在一定的剪切速率(≤1000 s-1)或者是振盪頻率(≤1000 rad/s)範圍內糖漿溶液符閤 Cox-Merz 法則;牛頓流體模型適用于剪切速率低于400 s-1時的數據擬閤,其標準誤差σ約2.4;Cross 模型適用于全範圍內的流變規律擬閤,標準誤差σ約6.5.糖漿溶液在剪切速率低于1000 s-1時,剪切粘度基本不變,錶現齣牛頓性;剪切速率高于1000 s-1時,齣現明顯的切力變稀行為,錶現齣假塑性.

The rotary rheometer and capillary rheometer were used to study the flow property of syrup solution, and the applicability of the rheological laws was discussed. The results show that syrup solution has the obvious linear viscoelastic region; the Cox-Merz rule is applicable to the syrup solution in a certain shear rate (≤1 000 s-1) or oscillation frequency (≤1 000 rad/s); Newtonian fluid model is suitable for syrup solution at a shear rates below 400 s-1 when data fitting, and its standard deviation σ < 2.4; Cross model is suitable for the full range of shear rate, and its standard error σ < 6.5; the shear viscosity of syrup is essentially the same, showing Newtonian fluid, at a shear rate of less than 1 000 s-1; while the shear rate is higher than 1 000 s-1, the apparent shear thinning behavior was apparent, showing pseudoplastic.
