对山楂红色素的微波辅助提取条件进行了选择，并简单研究其抗氧化性。实验结果表明，用95%乙醇溶液（pH 2）为浸提剂，用微波处理1 min，然后再常温浸提5 h，浸提效果最佳。此外，山楂红色素对羟自由基具有一定的清除作用，且随着提取浓度下降其清除能力逐渐减弱。

The study of aim was to seleeted the mierowave-assisted extraetion eonditions and antioxidant aetivity of red pigment from hawthorn. The optimum extraetion parameters are as follows:extraetion sol-vent 95% ethanol(pH 2),mierowave proeessing 1 min,and then extraeting 5 h at room temperature. In addition,the red pigment of hawthorn has the same seavenging effeet on hydroxyl radieal,and its seaven-ging eapaeity gradually weakened with the deeline of the eoneentration.
