以过氧化值(POV值)为指标,在猪油和花生油中添加番石榴叶多酚,研究其对食用油的抗氧化活性。结果表明,番石榴叶多酚对食用油有一定的抗氧化能力,其中油溶剂型番石榴叶多酚对食用油的抗氧化效果优于水溶剂型番石榴叶多酚,当番石榴叶多酚添加量为0.01%~0.02%时抗氧化效果明显。因此,番石榴叶多酚是一种有开发价值的天然抗氧化剂。

The antioxidation of guava polyphenol in lard oil and peanut oil is studied based on the peroxide value (POV) . The results show guava polyphenol has a few antioxidation effects in lard oil and peanut oil, and the oil solution of guava polyphenol has better effects than its water solution. When the addition amount is between 0.01%~0.02%, guava polyphenol has better antioxidation effect. So guava polyphenol is a potential plant source of antioxidants.
