以谷朊粉为原料,采用超声辅助碱性蛋白酶酶解制备ACE抑制肽,并对碱性蛋白酶酶解条件进行单因素分析及正交试验设计,确定最优的水解工艺条件.研究结果表明:超声波作用能够提高酶解的水解度和抑制率,同时能够缩短酶解的反应时间.各因素对水解度的影响顺序为:超声功率>酶浓度>温度>时间;最佳酶解工艺条件为:酶浓度为30 m g/g、功率为250 W、时间为60 m in、温度为50℃,此时水解度为14.64%,抑制率为80.37%.

ACE inhibitory peptides was prepared from wheat protein by alkaline hydrolysis methed ,with ultrasonic‐assisted .And the optimum condition was found by single‐factor anal‐ysis and orthogonal test design .The results showed that :ultrasonication could improve the degree of hydrolysis and inhibition rate .At the same time it could short the reaction time of enzyme solution .The order influenced on the degree of hydrolysis rate was as follow :ultra‐sonic power>enzyme concentration> temperature> time .The results showed that the opti‐mum hydrolysis condition was as folloes :The degree of hydrolysis of 14 .64% ,inhibition rate was 80 .37% ,when the enzyme concentration was 30 mg/g at 50 ℃ for 60 minutes and power w as 250 W .
