对新疆喀什地区5家奶驴养殖户和1家奶驴养殖场交售的108批次混合驴乳进行化学成分和理化指标检测，结果表明：驴乳全乳固体平均含量为9.46%，其中蛋白质1.82%、脂肪0.92%、乳糖6.10%；驴乳的平均密度为1.034 g/cm3、酸度2.6 oT、电导率2.52 mS/cm。2011—2014年喀什地区驴乳化学成分的总体水平保持相对稳定，为生产优质驴乳制品奠定了良好基础。

The chemical composition and physicochemical indexes of 108 donkey milks from 1 don?key farm and 5 donkey farmers in Xinjiang Kashgar were measured. The results showed that: the aver?age percent of total solids in the donkey milk was 9.46%, the percent of protein, fat and lactose among the total solids in the donkey milk was 1.82%, 0.92% and 6.10%, respectively. The donkey milk’s average density, acidity and electric conductivity were 1.034 g/cm3, 2.6° T and 2.52 mS/cm, re?spectively. The chemical composition of donkey milk in Kashgar kept a smooth level from 2011 to 2014, which lays a good foundation on the high quality donkey milk production.
