当前,西式面点技术专业教材存在的诸多问题已成为制约我国西式面点专业人才培养的重要掣肘。需要开发出科学实用,通俗易懂,针对性和可操作性强的西式面点技术教材,以适应西式面点技术一体化课程的“教”与“学”迫切需要,从教材目标,教材内容设计、教材内容组织、教材开发重点四个方面阐述了西式面点技术新教材的编撰思路。

Currently the problems which exist in the professional teaching of Western pastry have restricted the professional talent training of pastry in our country. So we need to develop scientific, practical, accessible, targeted and feasible teaching materials to accommodate the urgent demand of the teaching and learning of integration course of Western pastry. This paper elaborates the idea of compiling new teaching materials for Western pastry from the objective, content design, content organization and develop-ment point of the teaching materials.
